Soup is a savory liquid food that is made by combining ingredients, such as vegetables, meat and/or legumes in hot broth or water, until the flavor is extracted.
Ingredients
- 1 tablespoon oil or butter
- 1 large onion diced
- 250 grams carrots diced
- 2 Garlic cloves chopped
- 1 teaspoon coriander powder
- Half liter vegetable stock/broth
- Large bunch Fresh Coriander leaves (cilantro) roughly chopped
- Salt (preferably rock salt)
- Black Pepper 3-4 crushed
- Cinnamon half inch
Method
- 1. Heat the oil/butter in a non-stick pan, to a medium heat.
- 2. Add the sliced carrots, copped garlic cloves and diced onions. Cook for approximately 5 minutes until they start to soften.
- 3. Add the coriander powder, cinnamon, salt & pepper. Cook for a further 1 minute.
- 4. Add the vegetable stock. Bring the mixture to the boil. Simmer for 10-15 minutes until the carrots are very soft.
- 5. Blend until smooth.
- 6. Add the fresh coriander leaves (cilantro).
- 7. Serve hot.
