Carrot & Coriander soup

Ingredients

  • 1 tablespoon oil or butter
  • 1 large onion diced
  • 250 grams carrots diced
  • 2 Garlic cloves chopped
  • 1 teaspoon coriander powder
  • Half liter vegetable stock/broth
  • Large bunch Fresh Coriander leaves (cilantro) roughly chopped
  • Salt (preferably rock salt)
  • Black Pepper 3-4 crushed
  • Cinnamon half inch

Method

  • 1. Heat the oil/butter in a non-stick pan, to a medium heat.
  • 2. Add the sliced carrots, copped garlic cloves and diced onions. Cook for approximately 5 minutes until they start to soften.
  • 3. Add the coriander powder, cinnamon, salt & pepper. Cook for a further 1 minute.
  • 4. Add the vegetable stock. Bring the mixture to the boil. Simmer for 10-15 minutes until the carrots are very soft.
  • 5. Blend until smooth.
  • 6. Add the fresh coriander leaves (cilantro).
  • 7. Serve hot.
